Ci risiamo! Le valigie sono di nuovo tra i piedi, letteralmente!!

Operazione fondamentale del prima della partenza è dare un'occhiatina al frigorifero e alla dispensa per salvare tutto ciò che non può aspettare un mese. Puntualmente mi capita di dover aprire una dozzina di uova per recuperare gli albumi da congelare per future meringhe, occasionalmente di tostare del pain de mie per "consumare" un blocco di fois gras e sminuzzare un mezzo kilo di preziosi pistacchi di Bronte, perché anche soltanto l'idea di trovarli ammuffiti mi addolora. Così ne ho fatto un pesto e adesso è qui nel suo bel vasetto panciuto che aspetta di essere portato in rue Jean Mermoz da un bel pancione tondo tondo… perchè i pistacchi sono un'ottima fonte di acido folico, vitamina B6, E e minerali… tutta robetta preziosa per amiche in gravidanza!
Tostare i pistacchi (100g ca) in una padella antiaderente calda. Tritarli nel mortaio oppure nel mixer con uno spicchio d’aglio sbucciato e un po’ di fior di sale. Aggiungere a filo circa mezzo bicchiere di olio extra vergine d’oliva fino a ottenere una consistenza piuttosto densa. Al momento di condire la pasta, sciotegliene qualche cucchiaio con un mestolo di acqua di cottura. Buonissimo con l'aggiunta di pochissima pancetta da far rosolare in padella.
